Our Olive Fields
Our olive fields are spread across the municipalities of Herguijuela de la Sierra, Lagunilla, and Garcibuey in the province of Salamanca. Scattered over various hillsides, canyons, or peaks, they enjoy unique microclimates, typically facing south.
The plots have three main characteristics:
Smallholdings: They are very small, ranging from 8 to 60 olive trees, as there has been no land consolidation. This leads to higher costs due to the scattered nature of the plots.
Terraces: This ancient and labor-intensive method, historically used to overcome the steep slopes of these mountains, is also a major challenge for farming and harvesting since mechanization is not possible, requiring a great deal of manual labor.
Centuries-old olive trees: The vast majority of olive trees cultivated throughout the Sierra de Francia are over 100 years old. Like people and other plant species, they have less foliage vigor and productivity, and they require more costly treatments.
These three characteristics, which at first glance may seem like major disadvantages, are a great incentive for us due to their privileged ecosystem, which allows us to produce exclusive oils thanks to the soil structure, the area's rainfall, and the mild temperatures sheltered by the mountain peaks.
